To Cook or Not to Cook?

Cooking…basic to some a foreign language to others and a necessity to all! Everyone needs the basic skills to feed themselves and in order to graduate from pop tarts, McDonalds and Lean Cuisine into a healthy whole food, non-processed, clean lifestyle you need to know how to cook! In comes Justin Baumgartner, CrossFit Scottsdale student, chef, and mastermind behind those amazing Snackaroons!!

I am a self taught chef and started my career as a baker in Michigan. After moving to NYC I had a brief stint working pastry for Gary Robbins at the Biltmore Room in Chelsea before getting hired at Counter in the East Villagehttp://www.counternyc.com/.  At Counter I worked my way up from prep to kitchen manager/sous chef in about a year and a half. I then had the opportunity to open my own restaurant in Brooklyn and after a successful build and opening the owner and I could not get along and my run at Satchmo’s Place was over. This is when I heard a gentleman I had met when I first moved to NYC was doing a huge project near my house in Brooklyn so I contacted him. I was hired by Matthew Kenny, celebrity chef, to help with the build of his new concept, Blue/Green. I quickly worked my way up and within a few months was head of operations and running the 4000sqft production facility/learning annex/event space and overseeing the delivery of food to our four satellite cafes in Manhattan and Connecticut. While at Blue/Green I attended the Institute for Integrative Nutrition, http://www.integrativenutrition.com/, where I studied to be a certified holistic health counselor and learned all of the different dietary theories and how to heal with food. After completion of the course my wife and I decided to move back to AZ so I could launch Laughing Giraffe Organics and take what I was doing at Blue/Green and what I had learned at IIN and fuse them together into one concept. So it was then, May 2006, I founded Laughing Giraffe Organics. I started out in farmers markets and within two years I had national distribution and was a stable of the raw food set in 80% of Whole Foods Markets nationally.

Paleo Cooking Seminar/Cooking and Recipes 101

This 2hr instructional cooking class will cover food basics like:
 -balancing dishes(using fats, acids, sugars, etc. to make a complete and satisfying meal)
-using fresh herbs and spices
-deconstructing recipes and making them Paleo
-prepping food for the week
-salad dressings -vegetable preparation
-Paleo desserts …and more!

The course will be mostly instructional with preparation demos of leafy greens such as kale, collard greens, chard, etc. Learn several techniques for preparation to keep you stocked up and prepared to eat well at all times. There will also be tastings of a Paleo cheesecake! Along with instruction you will get recipes to take home for several paleo desserts and dishes.
